    Making the Mint & Coriander paste

  1. Begin by adding two handfuls of mint leaves and a handful of coriander leaves to a mixie jar. Pour 50 ml of water into the jar to aid the blending process.
    Coarsely grind the greens into a vibrant paste and set it aside
  2. Making the Mint rice

  3. Fire up the stove and place a pressure cooker over a medium-high flame.
    Drizzle three tablespoons of cooking oil into the cooker and wait until it heats up
  4. Add 3 tbsp ghee in a pressure cooker over medium heat. Add the fennel seeds and cook for a few seconds until fragrant. Add the cloves, cinnamon stick, and onions and cook until softened and translucent.
  5. Add the green chillies and 1 tbsp ginger-garlic paste and cook for a minute more.
    Add 1 tsp turmeric powder and cook for a few seconds more in Low flame.
  6. Add 100 gm green peas and 2 cups (600gm) rice and stir gently to combine. Now add the mint and coriander paste and combine.
    Add 1½ cup coconut milk and 1½ cup water and season with salt to taste.
  7. Close the pressure cooker and cook for 2 whistles.
  8. Let the pressure release naturally for 10 minutes before opening the cooker.
    Fluff the rice with a fork and serve hot.
